葡萄废渣固体发酵生产单细胞蛋白

The Production of Single Cell Protein by Solid State Fermentation of Grape Residue

摘要:      以葡萄废渣为唯一的碳源, 对固体发酵生产单细胞蛋白(SCP)进行了一系列的研究。选用2 株酵母菌和2 株霉菌进行不同组合的培养, 选取最佳的组合方式, 考察了影响单细胞蛋白生产的各个因素, 如菌种的接种量, 培养基中水的质量分数、发酵时间、发酵温度、培养基外加氮源的种类以及氮源的添加量等。并设计正交实验,初步确定了优化的培养条件, 即菌种接种量为15 %, 培养基中水的质量分数为60 %, 30 ℃培养72 h , 以尿素为氮源,发酵样品中添加质量分数为6 %的尿素。在此培养条件下发酵产物的粗蛋白的质量分数可达到发酵前葡萄废渣粗蛋白质量分数的2 倍以上。

Abstract:

        Single cell protein (SCP)production w as studied by solid state fermentation using g rape residue as a sole carbon source .Two strains of yeasts and two strains of molds were cultured in various mixing groups to choice the best combination way .Some factors of influence on SCP production were investigated, such as inoculation content , mass fraction of water in the culture medium , fermentation time , fermentation temperature , the resource of nitrogen , the addition of it , and so on .The optimum conditions were determined by orthogonal experiment .The optimum conditions are as follow s:the inoculation content of sprain is 15 %, mass fraction of water is 60 % in the culture medium , which is fermenting for 72 hours at 30 ℃, carbamide used as the nitrogen source , 6 %mass fraction of carbamide is added to fermentation sample .In the above conditions, the mass fraction of crude protein in fermentation production is mo re than 2 times, compared with that in grape residue before fermentation.
